The biggest reason kimchi is recognized is because of lactic acid bacteria. Since Mechnikov's study on lactobacillus intake and prolongation of life (1908 Nobel Prize in physiology or medicine), the efficacy of lactic acid bacteria (lactic acid bacteria) has been sufficiently verified, and there are also many studies on kimchi lactic acid bacteria. Assuming that kimchi is effective in improving digestion, suppressing bacteria that cause skin diseases, breaking down cholesterol , preventing adult diseases, losing weight, and significantly reducing stimulating food intake, it is said to be effective for stomach ulcers, most of which is due to its abundance of lactic acid bacteria.

However, there are many lactobacilli in other foods, so why kimchi is recognized for its effectiveness is thanks to the viability of the unique lactobacilli in kimchi. As mentioned above, most fermented foods are animal, but kimchi is vegetable. For this reason, lactobacillus kimchii[16], a unique lactobacilli that is not found in dairy products, lives in kimchi, which is much more viable than that found in most dairy products. The survival rate of animal lactobacilli is difficult to exceed 40%, but more than 90% of vegetable lactobacilli can survive in stomach acid. If it is a bacterium that can survive in kimchi made of irritating spices and condiments, the survival rate easily exceeds that of most products.

In other words, there is a small gap between the lactobacillus content and the bacteria that can actually settle in the intestine. In other words, while other products require more intake to reach the required amount of lactobacillus, kimchi is a kind of lactobacillus superfood, and if the quantity is properly controlled, it can become a fairly good health food. It can be covered to some extent by eating foods including lactobacillus or related health products, but just a few pieces of kimchi can quickly fill your needs will show how effective lactobacillus intake is. This does not mean that other products will fall, but there is no doubt that it is definitely one of the useful foods if you can achieve the desired effect faster and more effectively.

Because lactic acid bacteria are at the center of kimchi's effectiveness, some health foods may cultivate kimchi lactic acid bacteria separately and combine them with dairy products. However, it is not yet known whether its effectiveness is more efficient than consuming kimchi and taking lactic acid bacteria directly, and as mentioned earlier, the efficacy of kimchi comes not only from lactic acid bacteria, but also from a large number of beneficial substances produced during the fermentation process. Therefore, it is an area that requires further research (especially since it is obvious that only kimchi lactic acid bacteria will be mixed with huge amounts of sugar and animal lactic acid bacteria).

According to a research team led by Professor Park Yong-ha of Yeungnam University, 2,000 pigs infected with animal coronavirus (PED-CoV) were fed lactobacillus of kimchi and they were completely cured in a week.  Professor Park explained, "Eating kimchi lactobacillus can prevent infection of the virus by increasing immunoglobulins A, G (IgA, IgG), and gamma interferon."
