Galbi-gui or galbi is a Korean dish made by grilling beef or pork ribs.
'Galbi-ppe' is a compound word of 'galbi' and 'byeol'. The old form of 'galbi' is 'gari' and the old form of 'byeol' is 'ᄲᅧ'. Therefore, it appears as 'gariᄲᅧ' in 17th century literature, and when 'ㅽ' is written as 'ㅃ', it appears as 'gari-ppeol'. In modern Korean, 'galbi' and 'galbi-ppeol' have different meanings. 'Galbi' is "a word that refers to the twelve curved bones and flesh on the left and right that form the chest of cows, pigs, chickens, etc. for food," while 'galbi-ppeol' means "a word that refers to ribs (肋骨) in everyday life." It is not clear whether 'gari' in the 17th century has the same meaning as 'galbi' in modern Korean or has the meaning of 'galbi-ppeol'. However, looking at the fact that ‘륵(肋)’ was changed to ‘가리(gari)’ in the 18th century, it seems to have had the meaning of ‘rib bone’. ‘갈비’ first appears in a 19th century literature, and is written in <국한회어> as “갈비 脅幹肉<1895국한회,8>”, and in <춘향전> as “갈비 한 ᄃᆡ 듯지거 <18XX춘향철종下,36b>”, we can see that it is used with the same meaning as the modern Korean word ‘갈비’. However, looking at the fact that ‘협(脇)’ was changed to ‘갈비(galbi),’ it seems that ‘갈비붕(galbi)’ was also written as ‘갈비(galbi).’ However, the word ‘가리대’ corresponding to the modern Korean word ‘갈빗대’ appeared in the 19th century. It is written in the <한영자전> as “肋 (갈비대-*륵) -> 가리대(galbi-dae)”. In connection with the fact that ‘galbitdae’ refers to the frame of each rib, the ‘gari’ in ‘garidae’ can be seen as having the same meaning as ‘galbi-ppe’. In the <Joseon-eo Dictionary> published in 1938, ‘galbi’ is explained as an abbreviation of ‘galbitdae’, and ‘gari’ is treated as a synonym for ‘galbi’. Ultimately, ‘gari’ meant ‘galbi-ppe’ in modern Korean, and ‘galbi’ meant something eaten as food. It seems that the compound word ‘galbi-ppe’ was created to distinguish it from ‘galbi’, which is eaten as food, as ‘gari’ disappeared.
