Food made and eaten in the royal court in the old days. In Korea, most royal cuisine refers to food used by kings during the Joseon Dynasty. The contents of royal food during the Joseon Dynasty can be found out by the Jinyeon Uigwe (進宴儀軌) and other documents, or by a transferee who actually cooked as a nine-man in charge of the late Joseon Dynasty.
鮮 宮 飮食 is a dish served in the palace during the Joseon Dynasty and represents traditional Korean food. It was designated as Korea's National Intangible Cultural Property No. 38 on December 30, 1970.

Daily meals at the court are divided into four meals: surasang (serious meal eaten by the king) in the morning and evening, jaesu 飯床 in the early morning, and jaesuban (初). On days when people do not take medicine for soup, they prepare jaesu side dishes with porridge and dry side dishes in the early morning (before 7 o'clock). Surasang in the morning and evening is a 12-side table with 12 side dishes, and consists of three phases of disk, side dishes, and hot pot. Lunch tables and simple guests are prepared with noodles. Banquet ceremonies are held on the occasion of royal family's celebration, such as the king and queen's birthday, 60th birthday, and crown prince's chaekbong, as well as on the occasion of foreign envoys.
The main foods of the royal court in the Joseon Dynasty include sura, porridge, nungi, noodles, and dumplings. Side dishes include soup, chopsticks, steaming, seon, hot pot, stir-fry, roasting, red, appropriately made, pyeonyuk, succulent, raw vegetables, mustard, gujeol plate, abalone, musselcho, jangrajogae, yukhoe, yukhoe, raw beef, sashimi, ssam, fish vegetables, kimchi, and pastries. Bottoms include Adapted Pyeon, Adaptedjaeng, Thick Rice Cake, Hwajeon, Injeolmi, Yaksik, Dasik, Gakaekjeong, Gwaepyeon, Yakgwa, Gangjeong, Suksilgwa (Bam, jujube, Yulan, Zoran, and Gangran). Hwachae includes Cheongmyeon, Screen, omija punch, Sikhye, Sujeonggwa, Baesuk, and Means.

The royal food of the Joseon Dynasty was forgotten with the fall of the Joseon Dynasty, and since modern times, our own food culture has changed significantly due to rapid political and social changes, so the food served at the royal court during the Joseon Dynasty has been designated as a national intangible cultural property to continue the tradition of our food culture.
